I made these chipotle lime marinated eggs on a day when I honestly just wanted to try something new that tasted bright and spicy, but without depending on standing in the kitchen forever.

For these chipotle lime marinated eggs, I start with four medium boiled eggs because that soft center holds onto flavor better than a fully firm yolk. Then I whisk together about three tablespoons of chipotle in adobo, mostly the sauce but with just a bit of the chili for color, with the juice of one lime. Why? Well, the lime itself can wake the mixture up instantly. 

A half cup of water stretches the marinade enough to cover everything, and two teaspoons of honey soften the heat without turning it sweet.

I toss in a small handful of cilantro sprigs since the stems actually carry more of that herbal flavor than the leaves. At the end, I love to add a pinch of smoked paprika, because the whole mixture turns into this reddish, bright-smelling marinade.
