Chipotle Lime Marinated Eggs

Ingredients

Marinade
  • 3 tbsp chipotle in adobo (use mostly sauce, a little chili for color)
  • 1 lime (juice)
  • ½ cup water
  • 2 tsp honey (or agave or coconut sugar)
  • small handful cilantro sprigs (not leaves) *
  • pinch smoked paprika for extra red hue *

Steps

Step 1

Whisk chipotle, lime juice, water, and honey until smooth. Add cilantro sprigs.

Step 2

Pat peeled eggs dry then submerge completely.

Cover and refrigerate overnight (8–12 hours).

Step 3

Slice before serving; spoon a little of the red marinade over for gloss and flavor.

Step 4

These will last for 3-5 days in an airtight container in the fridge if they are medium-boiled eggs.

Hard-boiled eggs can last 5 – 7 eggs since the yolk will not spoil as quickly.
