  • 1 can (15oz) diced tomatoes, no salt added
    • I like to use fire roasted
  • 2.5 lb chicken breasts
  • 1 oz (about 3 - 4) dried ancho chili pepper
  • 1 whole corn tortilla
  • pinch of sea salt & pepper
