Greek Salad Pita with Chicken – 10-Minute Meal
Ingredients
- 2 cups Romaine lettuce leaves, chopped or torn
- 1 cup cherry tomatoes, halved
- 1/2 medium red onion
- 1/3 cup Kalamata olives, pitted and halved
- 2 tablespoons red wine vinegar
- 2 teaspoons dried oregano
- 2 tablespoons olive oil
- 2 tablespoons feta crumble
- 6oz rotisserie chicken, shredded and meat only
- 2 whole wheat pitas
Steps
Step 1
Chop up or tear lettuce into pieces.
Step 2
Add all salad ingredients to a mixing bowl and toss in the seasoning, vinegar, and oil to ensure all is coated well.
Step 3
Warm up a pita in the microwave for 15 – 20 seconds, slice it open and stuff one half inside of the other.
Step 4
Stuff with half of the salad!
Step 5
Enjoy it with some fresh fruit as part of a nutritious lunch or weekday recipe.
