- 1 cup reduced-fat mozzarella, divided into 5 servings
- Fresh parsley, chopped
How to Make Lasagna Soup Low-Carb
- Sauté the Sausage & Onion
Heat a Dutch oven or heavy-bottomed pot over medium-high heat. Once hot, lightly spray with oil and add the sausage. Let the fat render naturally while breaking it apart with a spatula. Add the diced onions and cook until they become soft and slightly browned at the edges. - Brown the Ground Turkey
Add the ground turkey to the pot and cook until nearly done, breaking it into crumbles as it browns. Just before the turkey is fully cooked, add the garlic and herb blend, sage, and fennel. Stir well to coat the meat and cook for another 2 minutes. - Simmer the Soup
