Hi everyone! Looking for an easy low-carb dinner meal? Then let me share one of my all-time favorite dishes — asparagus-stuffed chicken breast!

Asparagus — also called garden asparagus — is a vegetable with a very familiar flavor and medicinal properties. These are due to the diuretic content of the asparagus that boosts the production of urine and makes it far more alkaline.

Its young stalks are a good source of nutrients such as protein, calcium, iron, vitamin A, B6, K, and even dietary fibers.

There are many ways to prepare and serve this vegetable. It can be stir-fried, grilled, or used as an ingredient in soups and stews. It can also serve as an appetizer or a side dish.

This asparagus-stuffed chicken is very easy to play around with. You can use any chicken breast recipe as an alternative to barbecue chicken. You can also get different flavors by mixing in seasonings and spices of your choice.

Another exciting way to make this is by stuffing some cheese in for extra flavor and wrapping the chicken breast in bacon to add juiciness.

Other than asparagus, you can also use other vegetables like broccoli, quinoa, or even sun-dried tomatoes to pair with your own version of stuffed chicken breast. Any of them are bound to make a fine combo.

BBQ Chicken-Wrapped Asparagus


* Optional Substitution Note
  • 2, 3 oz thinly cut chicken breasts
  • 12 asparagus spears
  • 2 tbsp BBQ sauce (low sodium, reduced fat)
  • Seasonings: cumin, paprika, garlic, pepper
  • 1 cup diced bell peppers (optional for brown rice)
  • Suggested carbs: 1/2 cup brown rice
  • Fruit (optional): watermelon pieces


Step 1

Set oven to 405°F.

Step 2

Measure and cut chicken breasts into thin, 2-3 oz pieces. Feel free to further flatten the chicken with a mallet.

Step 3

Season chicken cutlets with 1 tbsp barbecue sauce (for each piece) and your choice of seasonings.

Step 4

Chop the ends off asparagus and wrap the chicken around 6 asparagus spears.

Step 5

Place the chicken on a baking sheet with the open facing down. OR, place on a grill with the open facing down.

Step 6

Bake in the oven or smoke on a grill for about 8-10 minutes.
