Cinnamon Spiced Popcorn Granola

Cinnamon Spiced Popcorn Granola

Ingredients for 21 servings

Serving size: 1/3 cup
  • Dry
    • 56g (~7 cups) air popped popcorn
    • ~1 1/2 cups mixed raw nuts (I used cashews and pecans)
    • 1 cup sliced almonds
    • 1 cup unsweetened coconut flakes
  • Wet
    • 2/3 cup maple syrup or raw melted honey (or agave)
    • 1/4 cup avocado oil (or olive oil or coconut oil)
    • 1 tablespoon cinnamon
    • 1/4 cup coconut sugar, tightly packed (or brown sugar)

Steps

Step 1

Set oven to 300F/149C.

Step 2

Mix together the dry ingredients in a large mixing bowl.

Step 3

Mix together the wet ingredients in a small bowl. Pour the wet over the dry ingredients and gently fold everything together using a spatula. Ensure every piece of the mix is coated.

Step 4

Evenly spread the mixture on a baking tray lined with parchment paper (or nonstick foil if you only have that).

Step 5

Bake in the oven for 25 – 30 minutes, removing it from the oven and gently stirring EVERY 8 – 10 minutes (this is an important step). Once it is golden, remove it from the oven and let it cool in the pan for 15 – 20 minutes to harden and crisp. As it cools, you can sprinkle a pinch of sea salt over it for a sweet & salty treat!

Step 6

Enjoy (and try not to eat it all at once)!
