Ways to Serve Banana Pudding Mousse

- As a Quick Breakfast: This mousse works great as a nutritious breakfast. The chia seeds provide fiber, while the protein powder and almond butter add a satisfying dose of protein.
- Post-Workout Snack: After a workout, your body craves protein, and this mousse provides an excellent recovery snack. It replenishes your muscles while satisfying your sweet cravings.
- For Dessert: Serve this mousse as a light dessert after dinner. It’s sweet but not overly rich, making it the perfect end to any meal.
- On-the-Go: Pack individual servings in mason jars or containers for a portable snack during the day. The mousse stays fresh in the fridge and is easy to take with you for a quick treat.
How to Store Banana Pudding?
To store this banana mousse pudding, follow these tips:
- In the Refrigerator: Store the mousse in airtight containers or sealed mason jars in the fridge. It will stay fresh for up to 3 days. The flavors will meld over time, making it even tastier the longer it sits.
- Overnight: For the best texture, let the mousse chill in the fridge for at least 3 hours, but it’s even better if left overnight. This will allow the chia seeds to absorb the liquid and create a thick, pudding-like texture.
Freezing: If you want to store it for longer, you can freeze individual portions. Let the mousse thaw in the fridge overnight before serving. However, the texture may slightly change upon freezing and thawing.

Step 1
Blend the Ingredients
Start by adding 1 1/4 cups of unsweetened almond milk to your high-powered blender. You may need more almond milk depending on the type of protein powder you’re using. Next, add 1/2 cup of chia seeds (white or black), 1/2 banana, 1 tablespoon of vanilla extract, and 2 teaspoons of Stevia in the raw for sweetness. If you prefer, you can use raw dates, honey, agave, or maple syrup as alternative sweeteners.
Step 2
Add the Nut Butter and Protein Powder
For a creamy and rich texture, include 2 tablespoons of almond butter (or cashew butter, if preferred). If you like the flavor of peanut butter, it works too, but it may be overpowering. Then, add 3 scoops of collagen peptides and vanilla or banana protein powder for added protein. Blend all the ingredients until smooth and creamy. Taste the mousse and adjust the sweetness with more banana or Stevia, if needed.
Step 3
Prepare the Jars
To assemble the mousse, take a small jar (around 435ml in size) and add 2 tablespoons of crumbled granola to the bottom. The granola will add a nice crunch that complements the smoothness of the mousse.
Step 4
Layer the Mousse
Evenly divide the sliced banana between the number of servings you are preparing. For instance, if making 3 servings, layer half of a banana’s slices at the bottom of each jar, on top of the granola.
Step 5
Pour in the Mousse
Pour the blended chia mousse over the bananas in each jar. Finish by adding the remaining banana slices and topping each jar with 2 tablespoons of granola for extra texture and flavor.
Step 6
Chill and Serve
Seal the jars and refrigerate for at least 3 hours, or overnight for the best texture. The mousse will thicken as it chills, providing a creamy and satisfying treat.

This is amazing.
I added chopped walnuts instead of granola because I didn’t have. And in the morning before eating I added Greek yogurt for high protein breakfast.
Happy to hear this! It’s always good to experiment with ingredients!
