One Pot Shrimp & Lemon Pasta – Mediterranean Diet
Ingredients for 4 servings
- 1 1/2lb raw shrimp, peeled and deveined
- 10oz wheat pasta (linguine)
- 1 1/2 cups cherry tomatoes, halved
- 1/2 cup Kalamata olives
- zest from 1 lemon (about 3-4 tablespoons)
- 1 tablespoon Italian seasoning (or your choice of dried herbs)
- 1 tablespoon olive oil
- pinch of sea salt & pepper
- 4 1/2 cups water (or low sodium chicken broth for more flavor)
- 4 cups raw spinach
- Garnish
- Feta
- lemon juice
Steps
Step 1
Set a skillet on HIGH heat. Once hot, spray with a little oil then add the shrimp. Let the shrimp sear for 2-3 minutes then mix it up in the skillet so that it cooks through, about 5 to 7 minutes total. Then remove the shrimp from the skillet.
Step 2
Set the skillet on medium high heat, then add the rest of the pasta ingredients EXCEPT the spinach.
Step 3
Bring the pot to a simmer and continuously stir and fold the pasta using tongs, ensuring it is not sticking. Once nearly all the water has been absorbed and the pasta has been cooked, reduce the heat to low.
Step 4
Add the spinach and shrimp to the pasta and fold until the spinach wilts into the pasta.
Step 5
Season to taste with sea salt, pepper and fresh lemon juice. Enjoy this pasta hot or cold. Garnish individual servings with feta if you’d like.
