Variations for Healthy Lasagna Meal Prep

  • Vegetarian Option: Swap the ground turkey for veggie crumbles or lentils. Use vegan cheese and omit the egg white to make a plant-based healthy lasagna meal prep.
  • Extra Greens: Add layers of baby spinach or kale between the meat sauce and sweet potato for added nutrients.
  • Cheesy Delight: If you prefer a richer taste, mix a small amount of Parmesan with mozzarella for the top layer.
  • Gluten-Free & Dairy-Free: Use dairy-free cheese alternatives and ensure your tomato sauce is gluten-free for a completely allergy-friendly dish.

I would like to know what size baking tin you used for the lasagna and shepherd’s pie.

Sounds great! You didn’t cook the sweet potatoes at all before layering? They cooked through ok? Thanks

This is excellent and I’ve been making it for years since first seeing it. Various combinations based on your own tastes/ideas are possible.

I’ve also taken out the marinara and added sautéed shaved steak and sautéed peppers and onions and a touch of reduced fat cream cheese to the cottage to make a Philly cheesesteak lasagna.
