Meal Prep Lasagna Ingredients

Main Ingredients:
  • 1.5 lb lean ground turkey
  • 400g sweet potato (thinly sliced using a mandolin or knife)
  • 1 egg white
  • 1/2 cup low-fat cottage cheese
  • 1/2 cup reduced-fat mozzarella
  • 2 vine tomatoes (chopped)
  • 15oz organic tomato sauce (no salt added)
  • 1/3 cup mushrooms (chopped)
  • 1/3 cup red onions (chopped)
  • 1 tbsp garlic paste
  • 1/2 cup chopped cilantro (optional)
Seasonings:
  • 1 tbsp Italian seasoning
  • Sea salt and pepper to taste

How to Meal Prep Lasagna

Step 1

Preheat Oven: Set your oven to 375°F.

Step 2

Prepare Ingredients: Slice the sweet potato lengthwise into thin slices using a mandolin for uniform thickness. Chop tomatoes, onions, and mushrooms.

Step 3

Mix the Cheese Layer: Combine cottage cheese and egg white in a small bowl. Set aside.

Step 4

Cook the Meat Sauce: Heat a skillet over medium heat and sauté red onions with garlic paste. Add ground turkey and cook until browned. Stir in chopped tomatoes, cilantro, mushrooms, tomato sauce, and Italian seasoning. Mix well and cook for another 5 minutes.

Step 5

Assemble the Lasagna: In a baking dish, start with a layer of sweet potato slices, followed by the meat sauce and the cottage cheese mixture. Repeat the layers until all ingredients are used. Top with mozzarella.

Step 6

Bake: Cover the dish with aluminum foil and bake for 45 minutes. Remove the foil during the last 10 minutes to let the cheese brown slightly.

Step 7

Cool and Portion: Let the lasagna cool before slicing it into portions for freezer meal prep lasagna or immediate consumption.
