This is part 3 of a 4-part recipe series with my friends from Yoplait on 4 easy, creative ways to incorporate more yogurt into our diets! For these recipes I’ll be using YQ Plain yogurt – it is ultra filtered milk and packed with protein. A 5oz serving has 17g protein and 1g sugar.

When you’re in a pinch of time and money, reach for reliable, quick, no-fuss recipes. I love adding yogurt to my chicken salad recipes to help boost the protein content and make it creamier.

The rotisserie chicken salad recipe is especially good for those in confined/limited kitchen spaces where prepping large amounts of food is difficult. This is a recipe you could even whip up in an office kitchen or college dorm!

Rotisserie Chicken Salad Recipe

Ingredients

Ingredients for 4 hearty servings

  • 1lb rotisserie chicken meat, breast, chopped into small pieces
    • Substitute: canned chicken breast meat (drained)
  • 1 large ripe avocado
  • 3 heaping tablespoons plain yogurt (I used YQ plain)
  • 1 celery stalk (stick), chopped
  • 1/2 green (or colorful) bell pepper, diced
  • 1/3 cup red onion, diced
  • juice from 1 lime (optional)
  • 1 teaspoon onion powder (optional)
  • 1 teaspoon garlic powder (optional)
  • sea salt & pepper to taste
Steps
  1. Mix together the avocado and yogurt first in a large bowl. Then fold/mix in the rest of the ingredients until thick and chunky.  Enjoy on a bed of mixed greens or with whole wheat bread or pita with lettuce and tomato.
