- 3lb halibut (or white fish)
- 1.5 tablespoon olive oil
- 1 teaspoon mineral salt
- 1 tablespoon fresh cracked pepper
- 1 tablespoon smoked paprika
- juice from 1/2 lemon
- 1/3 cup parsley
- 1/3 cup cilantro
- 1/4 cup Kalamata olives
- 1 tablespoon fresh ginger, minced
- 3 garlic cloves
- 1.5 tablespoon olive oil
- juice from 1/2 lemon
- 4 tablespoons capers, drained
- spray oil
- fresh lemon

Pat the fish dry with a paper towel.
Season fish with the ingredients in “fish rub,” gently rubbing all over the top of the fish.
Step 3
Using a cutting board and a sharp knife, mince all the ingredients for the “fish crust.” Alternatively, place all the ingredients in a food processor or blender and process until a fine or spreadable paste has formed.
Rub the paste on top of the fish.
Step 4
Place the fish in the oven and bake for 20 – 25 minutes, or until it has cooked through and the flesh is flaky white.
Step 5

I mostly stick with Salmon and shrimp when preparing seafood dishes but this has broadened my pescatarian pallet! It’s easy and has a very elevated flavor profile. Would make a great date night dish.
