Cottage Cheese Pancakes
These cottage cheese pancakes will put that traditional pancake recipe to shame. High in protein and made with oat flour, it is a healthy alternative to the carb-laden pancake mix that makes you feel bloated and sluggish. At first glance, you might be confused about using cottage cheese as an ingredient in pancakes, but the creaminess lends itself well to making a delightful and fluffy pancake. Make sure you have real maple syrup on hand since only that will do for one of the best healthy pancake recipes I have ever eaten.
This is a recipe the entire family can enjoy, for both breakfast and brunch. You can substitute almond flour for oat flour if you want it to be even more low carb. Starting the day right with healthy breakfasts is a great way to keep on track with your diet and fitness needs.
Because this pancake is a little more delicate, make sure you cook it on medium-low heat in a nonstick skillet and flip the pancake gently. This way you will avoid breaking it. A tsp of baking soda will help it stay fluffy and airy and a pinch of cinnamon will give it an aroma that makes you think of the best fall recipes. Once cooled, it can be sliced into strips and lightly toasted or dipped into an egg batter to make a French Toast Pancake hybrid. Make sure you pair with some delicious fruits and berries as well.
