Blend the Ingredients
Start by adding 1 1/4 cups of unsweetened almond milk to your high-powered blender. You may need more almond milk depending on the type of protein powder you’re using. Next, add 1/2 cup of chia seeds (white or black), 1/2 banana, 1 tablespoon of vanilla extract, and 2 teaspoons of Stevia in the raw for sweetness. If you prefer, you can use raw dates, honey, agave, or maple syrup as alternative sweeteners.
Add the Nut Butter and Protein Powder
For a creamy and rich texture, include 2 tablespoons of almond butter (or cashew butter, if preferred). If you like the flavor of peanut butter, it works too, but it may be overpowering. Then, add 3 scoops of collagen peptides and vanilla or banana protein powder for added protein. Blend all the ingredients until smooth and creamy. Taste the mousse and adjust the sweetness with more banana or Stevia, if needed.
Prepare the Jars
To assemble the mousse, take a small jar (around 435ml in size) and add 2 tablespoons of crumbled granola to the bottom. The granola will add a nice crunch that complements the smoothness of the mousse.
Layer the Mousse
Evenly divide the sliced banana between the number of servings you are preparing. For instance, if making 3 servings, layer half of a banana’s slices at the bottom of each jar, on top of the granola.
Pour in the Mousse
Pour the blended chia mousse over the bananas in each jar. Finish by adding the remaining banana slices and topping each jar with 2 tablespoons of granola for extra texture and flavor.
Chill and Serve
Seal the jars and refrigerate for at least 3 hours, or overnight for the best texture. The mousse will thicken as it chills, providing a creamy and satisfying treat.
