Avocado White Bean Herb Dip

Ingredients

Serving Size:1/2 cup
* Optional Substitution Note
  • 1 large ripe avocado
  • 1 can cannelini beans (white kidney beans), drained
    • substitute: garbanzo, red beans, navy beans
  • small handful parsley with stem, about 1/2 cup whole
  • 2 garlic cloves (optional but recommended)
  • juice from 2 large limes
  • 4 tablespoons avocado oil or olive oil
  • sea salt & cracked pepper  to taste
  • Garnish
    • chopped parsley

Steps

Step 1

Add ingredients to a food processor or high powered blender and process until smooth.

If you would like a smoother, creamy texture add 2 more tablespoons of oil and/or use juice from only 1 lime.  Season to taste with sea salt and pepper.

Step 2

Garnish with parsley and enjoy with chips or fresh veggies.

    Delicious ? I suggest tasting w 1 lime and adding as needed. My limes we big and overpowered the rest until I added more avocado. Def a keeper for weekly rotation!

    So delicious! I’m putting this on everything! Just want to mention though that the recipe on you posted on Facebook mentions adding garlic and the pic above shows garlic but it’s not mentioned in the recipe posted here. ?

    This has already become a staple in our house. I used it as a topping for fajita bowls, as a spread in chicken wraps, and of course just as-is with some tortilla chips. My husband even took some to share with his vegan coworker. 10/10

    This was SOO good! I swapped the parsley for cilantro and added 1 jalapeño & half of a serano pepper and ? by far one of my favorite salsa dips now!!

    Has someone tried substituting lemon juice for the lime juice? If so how did the recipe work out?

    1. lemon is perfect swap to give it a different flavor profile. ive done it. start with 1/2 lemon first.
