3-Ingredient Cold Spicy Bean Noodles

Ingredients

4 Servings
Serving Size:2/3 cup
* Optional Substitution Note
  • 220g uncooked udon noodles
  • 4 servings avocado white bean dip
  • 4 tablespoons red chili crisp in oil
    • substitute: red pepper flakes which reduces fat per serving by ~10g
  • 4 tablespoons water (or more/less as needed)
  • Optional garnish
    • fresh parsley

Steps

Step 1

Cook pasta according to the package instructions.  Drain and place in a mixing bowl.

Step 2

Even though the noodles may still be hot, add a serving of avocado white bean dip and chili crisp, along with 1 – 2 tablespoons of room temperature water.  Gently massage and toss the noodles in the sauce and add the remaining water (or more) as needed.

Step 3

Place in the fridge to chill and enjoy when ready! Garnish with fresh parsley and consider adding a protein like edamame or chicken to boost the macronutrients even more!
