Air-fried Crab Stuffed Shrimp

Air-fried Crab Stuffed Shrimp
Ingredients
- 1.5 lb jumbo shrimp, peeled and deveined
- small pinch sea salt
- 1 tsp fresh cracked pepper
- 1lb cooked crab meat, jumbo or claw
- 1 egg, lightly beaten
- 1/4 cup olive oil mayonnaise
- 1/4 cup 2% Greek yogurt
- 1 tsp smoked paprika
- 1/2 tsp cayenne *
- 1 tsp oregano (powder)
- 1 tsp dried thyme
- 1 tsp dried sage *
- 1 tsp dill *
- 1 tsp garlic powder

1 tsp onion powder

juice from 1/2 lemon

1/4 cup gluten free breadcrumbs
- I used (brown) rice panko
- spray avocado oil
- 3/4 cup gluten free breadcrumbs
Steps
Step 1
Carefully cut along the back of the shrimp where it is deveined from the top to the tail. Be VERY careful not to cut all the way through the shrimp. Repeat for remaining shrimp. Add a pinch of sea salt and black pepper and toss the shrimp in the seasoning.
Step 2
In a bowl, lightly beat the egg, then add the mayo and Greek yogurt and mix well together. Then add the spices and mix. Then add the crab and mix using a fork. And finally add the gluten-free breadcrumbs to help with binding.
Step 3
Spoon out about a tablespoon of the stuffing and use your hands to stuff the mix into the back part of the shrimp. Repeat for remaining shrimp and stuffing.
For best results, once the shrimp have been stuffed, I place them in the fridge to firm up a little before air-frying for about 20 minutes.
During this time, set the air-fryer to 400F/204C and give it time to warm up. If you are using the oven, set the oven to 420F/216C.
Step 4
Place the shrimp in the air-fryer basket and sprinkle the remaining breadcrumbs on top, using your hands to force them into the top and backside of the shrimp.
Lightly spray with a high smoke point oil like avocado, then air fry (or bake) for 15 minutes or until the shrimp is plump and the outside crust is golden brown. Repeat for remaining shrimp.
Step 5
Serve immediately and enjoy by itself or with your favorite condiment, like this lighter cajun remoulade.
