Ok, so hear me out – it may not be immediately clear why carrot, cumin, and cranberry are complementary ingredients for a  carrot salad, but let me tell you, this not-so-ordinary fusion of ingredients is extraordinary!  It’ll be your next go-to salad recipe.

Why cumin?

Cumin is one of my favorite spices!  No seriously, just search “cumin” on this site and you’ll undoubtedly see a ton of recipes.   Cumin is a commonly used spice in Middle Eastern and Indian cuisines and takes the salad to a new level. This nutty spice, with its slightly bitter undertone, complements the sweetness of the carrots. It adds a warm, almost exotic, depth to the salad recipe so each bite is a culinary adventure, not a mere side dish.

And if you’re confident with cumin, you may also want to explore using curry powder instead in this recipe.  The curry adds a slight bit of spice/heat which is a great note to offset and complement sweet notes.

And don’t forget the tartness…

Carrot Salad with Cumin & Cranberry Recipe

Ingredients

* Optional Substitution Note
  • Dressing
    • juice from 1 orange or 2 limes (or use 1/2 half from each)
    • 2 tablespoons extra virgin olive oil
    • 1 tablespoon cumin
    • s & p to taste
  • 4 large carrots, julienned (or matchsticks)
  • 1 cup dried cranberries
  • 1/2 cup finely chopped parsley
  • s & p to taste

Steps

Step 1

Whisk together the ingredients for the salad and set aside.

Step 2

Use a julienne peeler to create strips/noodles of carrot for the salad.  You will need a julienne peeler to do this or a mandolin with a julienne attachment.

Alternatively, you can just replace the strips with 4 cups of matchstick carrots.  Add the carrot to a large mixing bowl.

Step 3

Drizzle on the dressing.  Use your hands to gently toss the carrot in the dressing.  The citrus will marinate and help wilt/soften the carrot.

Add the cranberries and parsley to the bowl.

Serve and enjoy immediately while cold.
