Shrimp Marinara Zucchini Pasta

Here is a delicious shrimp & raw zucchini pasta salad that can satisfy your taste buds and your appetite. And you can customize it how you like! Boom.
The ingredients we will need for this zucchini noodle recipe are shrimps, zucchini, tomatoes, red onions, mushrooms, marinara, and seasonings.
Shred a zucchini, and set it aside. I used a Julienne Shredder to cut the zucchini. Zucchini noodles are gluten-free, and that makes them a perfectly healthy and low-calorie dish.
There’s no noodle recipe for zucchini, just eat them raw with your favorite source of lean protein. It’s a perfect match with chicken, ground beef and turkey. You can also make parmesan zucchini noodle recipes. But my favorite combo is shrimp and noodles.
If you don’t like the taste of raw zucchini, you can cook them. Cooking zucchini noodles should only take a few minutes, just as long as they soften.
Now, take a skillet to make a zucchini pasta sauce. Spray the skillet with coconut oil or olive oil. First, add 1/8 cup of diced red onion and the same amount of mushrooms. Saute the onions and mushrooms, and then add half a cup of low-sodium marinara, 1/4 cup of diced tomatoes and 6oz of cooked shrimp. Season with salt and red pepper.
Serve on a plate. Add zucchini and zucchini pasta sauce on the top. Garnish with spring onions and a slice of lemon.
If you want to increase calories, instead of shrimps use grilled chicken or maybe black beans.

- 1/2 cup low sodium marinara (I used Dave’s Gourmet organic marinara)
- 1/4 cup diced tomatoes
- 1/8 cup diced red onion
- 1/8 cup diced mushrooms
- Seasonings: sea salt, red pepper to taste

To make this more filling and to increase calories, use grilled chicken instead of shrimp and perhaps add black beans.
