If you have leftover quinoa, why not give this dish a try. This recipe will help you incorporate the leftover quinoa into an amazing Mediterranean-inspired bowl. With the addition of fresh vegetables and bold spices, you will enjoy every bite. You will be surprised what you can achieve when you embrace the basics of cooking without any special techniques or cooking variations.
Usually, quinoa is made to be eaten while it is hot, however, with this dish you will find out just how amazing a cold variation can be. This recipe is great if you do not have access to a microwave or any other way to heat up your lunch.
On that note, to make this flavorful delight you will need these simple ingredients: about two and a half cups of cooked quinoa, one cup of chopped cucumber, one and a half diced Roma tomato, a third of a cup of Kalamata olives also chopped, half a cup of cheese (preferably goat or feta), third of a cup of chopped cilantro, one tablespoon of cumin, juice from a lemon, and of course salt and pepper according to your taste.
To begin the preparation, cook the quinoa per the package instructions and leave it to cool for an hour in the refrigerator. After that, take a large enough bowl and put the rest of the ingredients together with the chilled quinoa. Make sure to toss well so that everything is distributed evenly. Use a spatula for easier mixing. Lastly, add salt and pepper to taste. All that is left to do is dive in and enjoy this tasty and healthy meal.

Ingredients
Ingredients for up to 5 servings:
- ~2.5 cups cooked quinoa
- 1 cup chopped cucumber
- 1.5 Roma tomato (diced)
- 3/4 cup chopped Kalamata olives
- 1/2 cup Feta (or goat) cheese
- 1/3 cup chopped cilantro
- 1 tbsp cumin
- juice from 1 lemon
- sea salt & pepper to taste
Steps
Step 1
Cook quinoa according to instructions and fluff with a fork.
Step 2
Chill the quinoa in the refrigerator for at least 1 hour.
Step 3
In a bowl, toss in all of the ingredients and stir with a spatula.
Step 4
Season to taste with salt & pepper.
Step 5
Scoop out about 3/4 cup – 1 cup for each serving.
