My name is Kevin. My life changed when I realized that healthy living is truly a lifelong journey, mainly won by having a well-balanced diet and enjoying adequate exercise. By experimenting in the kitchen and openly sharing my meals, I learned that healthy eating is hardly boring and that by making a few adjustments, I could design a diet that could help me achieve my personal fitness goals. Our bodies are built in the kitchen and sculpted in the gym.

Tomatillo Avocado Crema

Ingredients

Tomatillo Avocado Crema
Ingredients for 5 servings (~6oz)

Serving size: ~2 tablespoons
  • 1 small ripe avocado (or 1 cup)
  • 4 tomatillos, hulled and rinsed
  • 2 garlic cloves
  • 1 serrano pepper (or more to taste)
  • 1 cup cilantro
  • 1/4 cup (extra creamy) plain almond milk, I use Almond Breeze
  • pinch of sea salt & pepper
  • juice from 1 lime
Steps

Set oven to broil.  Add tomatillos, serrano and garlic to baking tray.  Broil for 6 – 8 minutes, or until the tomatillos and pepper begin to blister.  Remove and set aside to cool.

Add all of the ingredients to a blender and blend until smooth.  Season to taste with sea salt & pepper.  Adjust the consistency by adding more lime, almond milk or water.
