Quick & Easy Guacamole Quesadillas

If your usual meal prep is getting a bit old then you might want to put a new spin on things with our guacamole quesadillas recipe. This is one of our tastiest guacamole recipes that’s sure to impress visitors and get you a tasty, healthy meal.

The ingredients below will be enough to make you four quesadillas but you can always adjust the portions if you want to make a bigger batch, perhaps for a viewing party of the World Cup or the season premiere of The Walking Dead.

Start by picking up four gluten-free and low-carb tortillas from the store. My personal favorite is the one from Guiltless Foods. For the guacamole, you’ll need two large ripe avocados, one diced tomato, half of a diced red onion, and a quarter cup of finely chopped cilantro.

You’ll also need a pinch of cumin, some olive oil, fresh lime juice, and the classic salt and pepper combo. Once all your ingredients are in place, mash your ripe avocados in a bowl with a fork until mallet until it becomes smooth yet chunky then add in the other ingredients.

Be sure to mix together well before evenly dividing the guacamole. Spread it on half of each tortilla then fold the whole dish up. Put a nonstick skillet on medium heat or medium-high heat then spray it with your olive oil.

Wait for the pan to get hot then cook your quesadillas. We’d recommend cooking each side for roughly two minutes but you’ll be able to tell when it’s ready once the tortilla takes on a golden brown hue and the edges crisp over.

When you see this goldening and crisping, flip your tortilla over with a spatula and repeat for the other side. That’s all it takes to have your own nutritiously tasty guacamole quesadillas! Be sure to share this recipe with friends too, fit foodies!

  • 4 low-carb and gluten-free tortillas (I used Guiltless Foods)
  • Guacamole:
    • 2 large ripe avocados
    • 1 diced roma tomato
    • 1/2 diced red onion
    • 1/4 cup chopped cilantro
    • pinch of cumin
    • sea salt & pepper to taste
    • fresh lime juice to taste
  • spray olive oil

Steps

Step 1

In a bowl, add the ripe avocado and mash it with a mallet or fork until is smooth yet has some chunks. Then toss in the rest of the ingredients and mix together.

Step 2

Evenly divide and spread the guacamole on half of each tortilla then fold the tortilla to close it.

Step 3

Spray a nonstick skillet with olive oil and then set the skillet on medium-high heat.

Step 4

Once the pan is not, cook the quesadillas on each side for about 2 minutes or until the tortilla becomes golden brown and the edges began to crisp. Flip the tortilla over using a spatula and repeat.

Step 5

Boom.
