10-min Shrimp Tacos on Ezekiel Tortillas
These quick and easy shrimp tacos are also a healthy and low-calorie lunch and dinner option! Ezekiel tortillas are made with sprouted grains, which pack more nutrients but with less starch, making them a great alternative to flour tortillas for those fitness goals. Simple and delicious is the name of the game today, where I show that you don’t necessarily need a lot of prep time or cook time in order to create a healthful and tasty meal. There are only seven ingredients that take just minutes to put together, so keep on reading to find out how.
Peeled and deveined shrimp can be bought pre-cooked, or if you feel like being fancy, you can grill your own. Just make sure you remove the tails. Top them with some creamy avocado, juicy tomato, a sprinkling of feta, some peppers and fresh cilantro for a bright burst of flavor. Assemble the tacos by wrapping it all up in the Ezekiel tortillas and serve with a squeeze of lime! The flavor of cilantro lime is a timeless combination and one I always like to showcase. Since it’s so easy to put together, this dish can definitely be the star of your next do-it-yourself Taco Tuesday. You can swap out the feta for a dollop of sour cream (or alternatively, Greek yogurt), and if you’re feeling adventurous, a few slices of jalapeno make some spicy shrimp tacos that are to die for.
Other fun things that can be added are crisp, shredded cabbage and mango salsa. Sweet, juicy, and tropical mangos will bring to mind an island paradise. If you choose to grill your own shrimp, you can add different types of seasonings.
