If you are looking for a low carb version of tuna melts, you’re at the right place! It’s easy to make at home, and it doesn’t take you much time to make this simple lunch or a light dinner.
I had some leftover tuna from my article & video on creative ways to use tuna, so I put together this delicious low-carb slider in about 20 minutes. Try it out – you may fall in love with tuna all over again.
Before you start with preparing, set the oven at 400F.
Now, take a large bowl to combine all ingredients needed for classic tuna melt. First, make sure to drain all excess water from the tuna can. Mix tuna, chopped cilantro and red onion, dijon mustard, garlic paste and lemon pepper seasoning. Season to taste with some sea salt and pepper. Combine all ingredients with a spatula.
Remove stems from mushrooms, and clean inside using a spoon. Create sliders, and fill in with tuna salad evenly. Add reduced fat mozzarella on the top of the salad and overlap with the mushroom.
Stick wooden sticks in all the sliders so they don’t fall apart. Wrap the foil well around the sliders to prevent it from moving while baking in the oven. Place the burgers on a baking sheet and bake them for 15 minutes.

Ingredients
Ingredients for 1 serving:
- 6oz packet albacore tuna
- Three .5oz pieces reduced fat mozzarella
- 6 baby bella mushrooms
- 1/3 cup chopped cilantro
- 1/3 cup chopped red onion
- 2 heaping tbsp dijon mustard
- 1 tbsp garlic paste
- 1/2 tbsp lemon pepper seasoning
- sea salt & pepper to taste
Steps
Step 1
Set oven to 400F.
Step 2
Drain excess water from the package of tuna.
Step 3
Combine all ingredients – except for the mushroom caps – into a large bowl. Mix together.
Step 4
Remove stems from the mushrooms and scrape out the inside of the cap using a spoon.
Step 5
Build the sliders. Evenly divide the tuna salad among the 3 sliders.
Step 6
Top the tuna salad with a piece of mozzarella cheese and then add the mushroom cap as the top bun.
Step 7
Skewer the entire slider with a wooden kabob stick.
Step 8
Place the slider on a baking sheet and then wrap foil around the slider to keep it from moving in the oven.
Step 9
Bake for 15 minutes at 400F.
