Healthy Lean Flank Steak Street Tacos

Similar to a carne asada street taco, my steak tacos recipe is a flavorful piece of steak, spiced and then grilled, nestled within a corn tortilla. It is an absolutely delicious version of a street taco that also uses my avocado lime dressing. You can use flank or skirt steak here because they are full of beefy flavor, but make sure whatever cut you use, it is good quality so that the steak remains tender. Taco Tuesday has never looked so great!

While here, I topped it with shredded cabbage and serve it with a lime wedge and my avocado dressing, you can also use some homemade salsa, red onion, fresh pico, or chopped fresh cilantro to switch it up. This can even be a DIY Taco night if you also want to add the option of some grilled chicken thigh. The cumin, chipotle, garlic, and other seasonings pack tons of flavor which makes this one of my favorite taco recipes. If you want, you can add a dollop of sour cream as well, or shred some Mexican cheese.

You can also pack the cooked steak and all the toppings away to bring it into work the next day. Keep the ingredients separate so it won’t make the tortillas soggy, and construct it at your desk. You can easily portion this out for weekly meal preps and it will taste just as good as it did that first day. Still have leftovers? A breakfast skillet or a taco salad would be the next step!

Healthy Lean Flank Steak Street Tacos

Ingredients

Ingredients for 3 tacos:

  • 6 oz lean flank steak
  • 3 Food for Life corn tortillas
  • choice of raw veggie – I used purple cabbage for color since I like to eat at least 3 different colors for each meal
  • fresh cilantro
  • lime
  • avocado-lime salad dressing
  • Seasoning for steak: cumin, chipotle chili pepper, cayenne pepper, garlic

Steps

Step 1

Season flank steak with cumin, chipotle chili, cayenne pepper and garlic paste.

Step 2

Set a non-stick skillet on medium-high heat and add seasoned flank steak. Cook until desired readiness.

Step 3

Chop flank steak into tiny pieces and set aside.

Step 4

Prepare the avocado-lime dressing according to the instructions in the link.

Step 5

Chop up veggies (purple cabbage), limes and fresh cilantro.

Step 6

Warm corn tortillas in the oven or the microwave for about 30 seconds.

Step 7

Build your taco – add cabbage, meat, dressing, cilantro and fresh lime juice.
