Wait! Don’t toss out that leftover chicken breast (that you refuse to eat because you’re sick and tired of it by the end of the week). Toss it in a salad, chop it up, then wrap it up!

You can customize this recipe to your liking, and add the ingredients you want. I used a combination of chicken, spinach, tomatoes, goat cheese crumble, nuts and cranberries. The taste is wonderful, and it’s a great way to make the most of the chicken you have left.

If you are not a cranberry fan, you can use raisins. You can also replace the walnut with some other nuts, such as almonds or pecans, goat cheese with cows, or some other cheese. There are many options, so you can explore which combination you like best.

To combine all the ingredients well, chop finely together on a cutting board with a sharp knife. Mix them with each other at the same time.

When you have chopped the ingredients, add them to a bowl, add the vinaigrette dressing and combine by mixing it. Put the salad in the whole wheat tortilla, and roll it up. You can pre-heat the tortilla in the microwave or in a pan to soften it and make it easier to wrap.

Cut in half and enjoy your easy chicken salad wrap!

It’s very quick and easy to make, so this is the perfect option for lunch when you don’t have much time to make it. When you have leftover chicken breasts from lunch, don’t throw them away, but save for salad recipes like this when you’re in a race against time.

Chopped Chicken Salad Wrap For Leftover Chicken

Ingredients

1 Serving
* Optional Substitution Note
  • 1 medium whole wheat tortilla
  • 5oz cooked chicken breast (chopped)
  • 1 cup raw spinach
  • 5 cherry tomatoes (cut in halves)
  • 2 tablespoons raw walnut pieces
  • 2 tablespoons dried cranberries
  • 1/8 cup goat cheese crumble
  • 2 tablespoons of your favorite vinaigrette dressing

Steps

Step 1

Place all the ingredients (except for the dressing) onto a cutting board or sheet. Using the largest and sharpest knife you have, begin to chop up the ingredients.  As you chop, continuously mix the salad together using the knife, folding the ingredients into one another. This will help the pieces become smaller as you chop.

Step 2

When the salad is finely chopped, add the salad dressing and mix it into the salad.

Step 3

Place the salad on a whole-wheat tortilla. Fold in the sides of the tortilla and use your hands to “cup” the salad and pack it in tightly. Roll it over.

Step 4

PRO-TIP: place the tortilla in the microwave for 10-15 seconds prior to adding the salad. This will help make it easier to roll.

Step 5

Slice it open and enjoy!
