Let’s get started on making these delicious treats following these few easy steps.

First, we need to prepare all of the components. You will need the following ingredients: fifteen Medjool dates, thirty walnut halves, a log of soft goat cheese (approximately four ounces), water, fresh dill, honey, rosemary, and thyme. If you do not have any fresh herbs on hand, you may simply make do with dried dill and rosemary.

Simple Steps to Prepare Stuffed Medjool Dates

Once all of the ingredients are ready, preheat your oven to 400 degrees Fahrenheit (or 204 degrees Celsius) to ensure the perfect baking process.

Now, it is time to prepare the herb cheese mixture. Start by tossing the goat cheese, one tablespoon of water, fresh dill and rosemary together in a mixing bowl. Mix everything together until you reach a smooth yet creamy consistency. A pro tip is to soften the goat cheese by letting it sit at room temperature for some time before you start the mixing process. This way, the cheese will incorporate much better.

Now comes the main part of the recipe. Begin by cutting open the dates. Once that is done, take each half and fill it up with a spoonful or two of your goat cheese herb mixture. Place the filled halves onto a baking sheet that is covered with parchment paper. Take your walnuts and cover each date with approximately half a walnut, or if your dates are on the larger side you can use an entire walnut.

Place them in the oven and bake for around ten minutes, or until the insides are really gooey and golden brown.

As soon as the dates come out of the oven, drizzle some warm honey over them and add some fresh thyme leaves for additional taste.

Serving size – 1 stuffed date
  • 15 (medjool) dates, pitted
  • 30 (~60g) walnut halves
  • Herb Cheese
    • 4oz soft goat cheese log
    • 1 tablespoon water
    • 2 sprigs fresh rosemary, leaves only
      • SUB: 2 teaspoons dried rosemary
    • 2 sprigs fresh dill
      • SUB: 2 teaspoons dried dill
    • 2 tablespoons honey, slightly warm for easier drizzle (if you can, buy local honey to help with allergies)
  • Garnish
    • 1/4 cup fresh thyme leaves

 

Steps

Step 1

Set oven to 400F/204C.

Step 2

Add the ingredients for the herb cheese to a mixing bowl.  Use a hand mixer or spatula to whip everything together.  Pro-tip: let the goat cheese rest for 15 – 20 minutes at room temperature before whipping to soften it.

Step 3

Butterfly, slice open, each date and add  about a teaspoon or 2 of the goat cheese and then stuff it with a walnut half, or 2 halves depending on the size of the date, then place it on a baking tray lined with parchment paper.

Step 4

Bake in the oven for 10 minutes.

The inside should be gooey and soft like caramel while the outside is hardens, kinda like candy.

Drizzle some honey on each one and top with FRESH thyme.  Enjoy while warm!
