This might just be the best darn fusion recipe that I’ve ever put together, and I promise you’re going to love them all the way until the last bite. Vegans can substitute the beef for veggie ground and use cashew cheese to keep this one plant-based. File these under “quarantine treats” and don’t forget: Everything in moderation!

Cauliflower crust pizza has been around as an alternative to gluten- or bread-averse dieters for a while now. Still, it can be a hard recipe to get right on your own. That’s why I challenged myself to make the BEST cauliflower crust pizza I possibly could. And you know what? It turned out AMAZING. Try it yourself, and you’ll never look at cauliflower the same way again!

DATE NIGHT MEDITERRANEAN SALMON
Before coronavirus came along, I used to invite folks to come down to the Fit Men Cook studio and make a meal with me. For this one, I got together with celebrity Bachelor Connor Saeli to put together the ULTIMATE date night dish. Chicken was my protein of choice when I first began my health and wellness journey. But, as you might recall, I had a tough time making it without drying the meat right out. PLANTAIN POPCORN CHICKEN (CHOPPED SALAD)
This is a quick recipe that flips a classic comfort food on its head to give it a healthy makeover. Using crushed plantain chips instead of panko makes this recipe gluten-free AND more nutritious. Plus, since plantain chips absorb flavor so well, they help guarantee that you’ll relish every single bite of this dish.

VEGAN BUTTERMILK AIR-FRIED OYSTERS
After getting tagged in a bunch of videos, I decided to try this recipe out and see if they’re really as good as they look. Spoiler alert: they are! Nobody in the studio even knew what oyster mushrooms were before I brought some into work. But they were DEFINITELY glad that I did.
