White Bean Farro Stew
Ingredients for 6 servings
- 2 tablespoons olive oil
- 1/2 medium white onion, chopped
- 2 celery stalks, chopped
- 2 medium carrots, chopped
- 3 garlic cloves, minced
- 2 cans (28oz) (fire roasted) diced tomatoes
- 1 can (15oz) white beans, drained
- 1 cup uncooked farro
- 4 cups water
- 1 bay leaf (optional)
- Sea salt & pepper to taste
- Garnish
- Parsley
Steps
Step 1
Set a heavy bottom pot on medium high heat. Once hot, add olive oil, onion, celery and carrots. Cook for 3 -5 minutes until the onions turn somewhat brown. Add the garlic and cook for another minute.
Step 2
Then add in the remaining ingredients. Bring to a boil, then reduce the heat and cover and simmer for at least 20 minutes.
Step 3
Season to taste with sea salt & pepper. Garnish and enjoy!
