Smoked Salmon Mini Frittatas
Today’s brunch: smoked salmon mini frittatas with veggies.
Wake up earlier tomorrow and whip up these Delicious protein & omega-3 fatty acid bites in 20 minutes. If you don’t like smoked salmon, consider adding portabella mushrooms, chicken sausage or even turkey. Make it your own!
You will need an egg, egg whites, arugula, green onions, Greek yogurt, smoked salmon and goats cheese. It’s as easy to make as placing all ingredients in a cast iron skillet and baking.
Preheat the oven at 350F.
Take one bowl and one egg, three egg whites and Greek yogurt to it. Mix it up, toss in some green onions, goat cream cheese, salmon and arugula, and combine.
I used muffin cups for this recipe. They should be lightly oiled with coconut oil so that they do not stick. Pour the smoked salmon frittata mixture evenly into cups and place in the oven. Bake for at least 20 minutes, or until the eggs are completely cooked and the frittatas get a golden color.
Pull them out and allow to cool slightly before serving. It will taste as good as it looks, because of a soft texture and a rich, creamy taste.

Frittatas are great because you can literally throw a bunch of ingredients together and cook them. You can easily replace some ingredients for your favorites. Instead of smoked salmon, you can add a little leftover chicken or turkey. It’s a great way to finish some leftovers.You can also add whatever vegetables you have in the house at that moment. Spanish, zucchini or asparagus would go great with this frittata recipe as well.

Smoked Salmon Mini Frittatas
Ingredients for 1 or 2 servings:
- 2 Eggs
- 4 Egg whites
- 1/3 Cup plain Greek yogurt
- 4oz Smoked salmon (or choice of protein)
- 1/4 Cup goat cheese
- 1 Cup Argula (or Spinach)
- 1/8 Cup chopped green onions
- Seasoning: Pepper
- Set the oven to 350F.
- In bowl mix Eggs with Greek yogurt
- Add green onions, salmon, goat cheese & Arugula
- Spray muffin cups with coconut oil and pour in mixture
- Bake for 20 minutes at 350F.
- Enjoy!
