Low Carb Rosemary Zucchini Bites

Ingredients for 12 bites

* Optional Substitution Note

  • 1 medium zucchini
  • 2 eggs, lightly beat
  • 1/2 cup + 2 tablespoons fine almond flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoon dried rosemary
  • 1 cup shredded parmesan
  • sea salt & pepper to taste

Steps

Step 1

Set air-fryer to 400F. If you do not have an air-fryer, set your oven to 420F.

Step 2

Grate the zucchini onto a cheesecloth or a strong paper towel. Wrap up the edges and twist to squeeze out all the water from the zucchini. Once it is “dry,” then add it to a large mixing bowl.

Step 3

Add the remaining ingredients and mix everything together. It should be a somewhat sticky batter. Use an ice-cream scoop or a tablespoon to equally carve out roughly 12 balls. Roll each one in your hand, then place it in an air-fryer basket. DO NOT crowd the basket – do this in batches. Cook the bites for 8 to 10 minutes or until they are crispy and golden on the outside. Set them aside to slightly cool.

Step 4

Add a sprinkle of sea salt and enjoy with your favorite low-calorie condiment! For me, I never go wrong with marinara!
