Smoked Trout with Lemon Butter Caper Sauce

Smoked trout is one of my favorite proteins for meal prep. I usually smoke it on the grill or bake it in the oven. Tonight, I made it tens times better by adding a lemon butter caper sauce, perfect to compliment my lower carbohydrate (keto) diet.

Start by firing up the grill at 250 F. In case you do not have a grill or want to bake in the oven, preheat the oven to 400 F. If you are grilling fish, it will take a maximum of 45 minutes for the fish to be done. However, if you bake in the oven, the process is much faster and you will need less than half an hour. So before you start preparing trout recipe, think about how much time you have available and get organized on time.

To prepare this smoked trout recipe, season smoked fish with salt and pepper and spray them with oil and start grilling or baking.

During this time, prepare the amazing lemon butter caper sauce. In a nonstick skillet, add olive oil and garlic and cook on medium heat for a couple of minutes, just to flavor the oil. Be careful with garlic, you don’t wanna burn it. After that, remove from the heat to add butter, capers, lemon juice and finely chopped parsley. Season to taste with a pinch of sea salt and pepper. Quickly stir to get a semi-creamy structure of the sauce.

Of course, if you are more of a salmon lover, you can use this creamy lemon sauce with smoked salmon, it will go very well with smoke flavor.

Serve the finished trout on a plate, pour over the hot lemon sauce and garnish. Use fresh parsley and cracked or red pepper for the garnish. Viola!

You can enjoy this wonderful dish with your lovely family for lunch or dinner time.

Ingredients for 6 hearty servings:

  • 2lb wild trout (or six ~5oz pieces)
  • pinch of sea salt & pepper
  • spray olive oil
  • 1 tablespoon olive oil
  • 1 tablespoon garlic, minced
  • 3 tablespoons butter (I used Earth Balance)
  • 1 1/2 tablespoons capers
  • juice from 1/2 lemon (or to taste)
  • 1/8 cup finely chopped parsley
  • sea salt & pepper to taste
  • Garnish
    • fresh parsley
    • cracked pepper or red pepper

Steps

Step 1

Fire up the grill (250F) or set oven to 400F. Add a pinch of sea salt & pepper to the trout filet, then spray with olive oil. If cooking on the grill, smoke for about 30 – 45 minutes. If baking in the oven, back for 20-25 minutes until the flesh is flaky.

Step 2

While the fish is cooking, set a nonstick skillet on low-medium heat and add olive oil and garlic. Flavor the oil by cooking the garlic for 3 to 5 minutes and be careful to not burn the garlic.

Step 3

Remove the skillet from the heat, then add the remaining ingredients to the skillet. Quickly stir the sauce so that it turns into a semi-creamy sauce, then pour it over the freshly baked trout.

Step 4

Garnish and enjoy!
