Got a bunch of leftover quinoa from the week? This happens to me quite often. No problem! Just make these quinoa pancakes. These are easy, simple and delicious, and it’s a great way to incorporate another complex carbohydrate and power food into your diet.
Of course, you can pre-cook the quinoa, and enjoy this healthy dessert after lunch, or it can be a great post-workout meal. Think about it.
For this quinoa flour pancake recipe, you will need only a few ingredients: cooked quinoa, sprouted grain mix flour, eggs, almond milk, baking powder and pinch of sea salt.
Oat flour instead of sprouted grain flour should work too, as well as another plant-based milk. If you want to make them vegan, just substitute the eggs with flax egg. You can also add a little lemon zest and juice to this mixture if you like, it will give them a special flavor.
These pancakes provide 21g of protein and a lot of fiber, thanks to quinoa, and that’s what I love about them!
In a mixing bowl place flour and baking powder and mix together. In another bowl whisk the eggs, add almond milk and mix. Pour in the bowl with dry ingredients then add the rest of ingredients and stir until you get a smooth batter.
Cook the pancakes over medium heat, in a non-stick skillet. Sprinkle with coconut oil and cook on each side until golden brown, or until bubbles appear on top. Remove from the heat to a plate and keep warm. Repeat the process with the remaining batter.
Serve them warm, and garnish these fluffy quinoa pancakes with some berries and honey, agave or maple syrup.
