This recipe for Microwave Frittata makes a hassle-free breakfast that is ideal for hectic mornings when you need a filling and quick meal. To begin, put lean breakfast turkey sausage in the bottom of a bowl that is safe to be microwaved, and heat it for one to three minutes, or until it is cooked through.

With a spoon or spatula, cut the cooked turkey sausage into little pieces. Next, sprinkle some fresh spinach over the turkey in the bowl and cover just enough to give it a little wilt.

Beat together whole eggs, egg whites, minced garlic, onion powder, cracked pepper, and Italian seasoning in a separate bowl. Evenly coat the whole surface of the turkey and spinach in the bowl with this egg mixture. For an additional pop of color and taste, feel free to add any desired garnishes, such as chopped green onion and Fresno pepper.

After loosely covering the bowl, microwave the frittata for 3 minutes at a time, then 2 minutes, or until the eggs are fully cooked. Depending on your microwave’s wattage, cooking times may change; therefore make necessary adjustments to get the right consistency.

After the frittata is cooked, divide it into parts and serve it with bread or oats for a hearty and filling breakfast.   • 2 whole raw eggs
  • 2 raw egg whites
  • 1 teaspoon onion powder
  • 1 tablespoon garlic, minced
  • 2 teaspoons Italian seasoning
  • cracked pepper to taste
Garnish
  • fresno pepper, chopped
  • green onion

Steps

Step 1

Add turkey sausage to the base of a microwave-safe bowl.  Lightly cover then place in the microwave to cook for 1 – 3 minutes.

Step 2

As soon as the turkey finishes, chop it up with a spoon spatula into small pieces.

Add spinach immediately on top of the turkey and lightly cover so that it wilts.

In a separate bowl, beat eggs together with the remaining ingredients then pour into bowl or dish with the turkey.  Add any garnish on top.

Lightly cover and cook in the microwave in increments of 3 minutes and 2 minutes until the eggs are completely cooked through.  Slice and enjoy with oats or toasted sourdough!
