Start by adding the chopped turkey sausage to the base of a microwave-safe bowl. Lightly cover the bowl and microwave for 1 – 3 minutes until the sausage is cooked through.
Once cooked, chop the turkey sausage into small pieces using a spoon or spatula.
Immediately add the spinach on top of the turkey in the bowl and lightly cover to allow it to wilt.
In a separate bowl, beat together the whole eggs, egg whites, minced garlic, onion powder, Italian seasoning, and cracked pepper.
Pour the egg mixture into the bowl with the turkey and spinach. Add any desired garnishes on top.
Lightly cover the bowl and microwave in increments of 3 minutes, followed by 2 minutes, until the eggs are fully cooked through.
Slice and serve with oats or toasted sourdough for a hearty breakfast that’s ready in minutes!
