Low Carb Spiced Cocktail Nuts

Ingredients for 8 servings

* Optional Substitution Note

  • Spice mix
    • 1/3 cup coconut sugar
    • 1 teaspoon cinnamon
    • 2 teaspoons chili powder
    • 1/2 teaspoon nutmeg
    • pinch of sea salt
  • 1 1/2 Bob Evans Egg Whites (5 tablespoons)
  • 1 cup pecans
  • 1 cup raw cashews
  • 1/2 cup coconut flakes (unsweetened)
  • 1/2 cup sliced almonds
  • sea salt to taste

Steps

Step 1

Set oven too 325F.

Step 2

Mix together the spices in a small bowl.

Step 3

In a large bowl, add Bob Evans Egg Whites. Whisk until peaks form.

Step 4

Add the remaining ingredients AND the spice mix to the bowl. Stir and fold everything together.

Step 5

Line a baking tray with parchment paper and add the nuts to the pan and spread them out.

Step 6

Bake in the oven for 45 minutes and flip/stir them halfway through.

Step 7

Let the nuts COMPLETELY cool down, then break apart if needed, add sea salt to taste and enjoy!
