Simple Steps to Prepare Feta Fried Egg Recipe with Sweet Potato Hash Brown

To make the basis for this delicious Feta Fried Eggs over Sweet Potato Hash Brown dish, start by peeling and grating the sweet potato. Apply a little coating of olive oil and arrowroot powder to the sweet potato to improve its texture. Spread the coating evenly with your hands so that it becomes somewhat sticky.

Lightly coat a nonstick skillet with olive oil spray before heating it over medium-high heat. Spread out the cooked sweet potato on the griddle so it gets as crispy as possible. Cook for 5 to 6 minutes, turning the sweet potato halfway through so it does not burn and gets a uniform golden color.

Add the feta crumbles and break open two eggs on top of the sweet potato mixture, cooking it until it is seared to perfection and has taken on an amazing color shift. Your savory masterpiece is finished when the whites are properly set, which should take around 3 minutes to cook.

Finish off this cooking journey by taking the skillet off of the burner and adding the finishing touches to your creation. Add slices of ripe avocado, a sprinkling of garlic chili crisps, and a heaping helping of freshly chopped parsley to finish it off. Savor the delicious blend of flavors and textures in this amazing dish! Enjoy the meal as soon as possible while it is still warm, and celebrate a simple culinary victory.

I just made this for the first time this morning and oh my word it’s a keeper. This was exactly what I needed to start off the day on a healthy and delicious note, and the combo of sweet, spicy, and crunchy is everything.

I eat this at least 3 times a week. Absolutely adore it and have told multiple people to try.

Because I’m time poor, I whisk the eggs and make it more of an omelette, chucking everything in a bowl, minus the cornstarch/arrowroot. Add a few sliced Kalamata olives, spring onion, and season the avocado with paprika.
