Epic Shrimp Burgers

I know you’re probably tired of third party digital ads hitting you with recipes that just don’t work for your personal goals, so I’m here to show you ones that can. Rather than mincing the shrimp by hand, I throw all the ingredients into a food processor so that it is a breeze to make the patties. Sometimes chopping by hand will have them falling apart on the grill, so to avoid that I make sure that it is a smooth paste before adding the finely chopped bell pepper. Unlike some other burger patty recipes, I don’t use bread crumbs in the mixture to keep it as low carb as possible. If you want to omit carbs altogether, instead of a gluten free burger bun, use portobello mushroom caps. A squeeze of lime juice or a pinch of lemon zest for garnish will add a bright burst of flavor.
Since the shrimp burger patty freezes well, you can lay them between sheets of wax paper and freeze them raw or cooked. This way you can make these burgers any night of the week, any time the craving hits you. High protein and low fat, what could be better?

Shrimp burger ingredients for 3 large patties:
- 1 lb peeled & deveined raw shrimp
- 1 tablespoon extra virgin olive oil
- fresh green onion
- 1 finely chopped (red) bell pepper
- fresh cilantro
- 1 teaspoon cumin
- pinches of sea salt & pepper
- red pepper flakes (optional)
- gluten-free buns OR
- grilled portobello mushrooms (for a lower carb option)
- mashed avocado
Set the grill temperature to about 200F.
Add burger ingredients (except for the bell pepper and green onion) to a food processor or blender and pulse until you make minced shrimp. Once the mince is made, dump it in a bowl then add chopped bell pepper and green onion (and any other crispy veggie of your choice).
Form patties and place them in the fridge for about 20 minutes before placing them on the grill.
Place the burgers on the grill and cook them for about 15 to 20 minutes, about 8 to 10 minutes each side. I personally like to smoke these patties so the temperature should be a little lower so you can cook them longer.
Remove the gills from large portobello mushroom caps, brush them with olive oil and place them on. Grill for about 10-15 minutes.
Assemble the burger. Devour. Boom.
