Pineapple Peanut Chopped Salad with Peanut Dressing

Pineapple Peanut Chopped Salad with Peanut Dressing

Ingredients for 4 large servings

* Optional Substitution Note

  • 4 cups chopped swiss chard (or Romaine lettuce)
  • 2 cups finely chopped red cabbage
  • 1 large carrot, thinly sliced (or 1 cup matchsticks)
  • 2 cups pineapple, diced
  • 3 green onions, chopped
  • Dressing
    • 8 tablespoons (1/2 cup) raw, natural peanut butter (in oil)
      • SUB: tahini
    • 4 tablespoons low sodium Hoisin or teriyaki sauce
    • 2 tablespoons rice vinegar
    • 2 tablespoons mirin (OPTIONAL but recommended)
    • juice from 1 lime
    • 1/3 cup water (or more/less to reach your desired texture/consistency)
  • Garnish
    • cilantro
    • crushed roasted peanuts

Steps

Step 1

In a large bowl, toss together the ingredients for the salad.

Step 2

Mix together the ingredients for the dressing. Add tablespoons of water until you reach your desired level of consistency.

Step 3

Drizzle over the salad and enjoy!
