Spicy Harissa Grilled Chicken Breast

Ingredients

Ingredients for 4 servings:

  • ~20oz chicken breast
  • 3 tbsp Harissa sauce
  • 1 tbsp ground Rosemary
  • 1 sprig fresh rosemary
  • ½ tbsp. cumin
  • sea salt & pepper to taste
  • 15 cherry tomatoes
  • coconut oil spray
Steps
  1. Set oven to 350F.
  2. Season chicken breasts with Harissa, fresh rosemary and cumin. Feel free to use other spices but be careful of too much sodium.
  3. Place a cast iron skillet on medium-high heat and spray with coconut oil. Sear the chicken breast on both sides (about 3 to 5 minutes) until brown.
  4. Add cherry tomatoes and fresh rosemary to the skillet. Bake in the oven for 15 to 20 minutes depending on thickness of chicken breasts.
