Here’s the quick backstory on this amazing date and walnut snack…

Last year I traveled to Tel Aviv for an amazing food tour. You can watch part 1 and part 2 of my adventure in Israel on my YouTube channel.

While I was there I got to visit Jerusalem where I met one of the most energetic and enthusiastic persons I’ve ever met in my life. He owned a natural wellness shop in the middle of the town’s market.  He explained that years ago his family emigrated from Yemen to Israel.

To survive he told me that he and others survived off the “perfect snack.” He took a date, removed the pit, then stuffed it with a walnut.  He gave it to me and said, “try it, go ahead.”  I took a bite and it was delicious.

He said, “this is the perfect snack or meal because it’s natural. We didn’t have to heat it up or keep it cold. It gave us energy so we could survive the long journey.”

His story was simple and profound.

He essentially gave the base ingredients for energy bars – the ones we pay $5 each for in the store, that are likely filled with other additives, preservatives and “science” to make it taste good.  But, here, in the middle of this market in Jerusalem, he stripped it down to its core and essentially said, “this is all you need to survive and thrive.”

Needless to say, I started eating these snack bites myself.  First, the way he showed me and now, with little additions here and there to manipulate the flavor profile and the macronutrients.

I called my fellow Dallasite, Kathy Tran, who takes the dopest pics imaginable, to bring this story to life.

Date & Walnut Energy Snacks

Ingredients

* Optional Substitution Note

Ingredients for 5 energy snacks

  • 5 medjool dates
  • 30g raw walnuts
  • 5 tablespoons melted unsweetened dark chocolate – optional
  • topping of choice (coarse sea salt) – optional

Steps

Step 1

Open a date, remove the pit.

Step 2

Add walnut halves.

Step 3

Or you can add other ingredients such as almond butter or beef jerky.

 

Step 4

Press the date firmly closed.

Step 5

There’s the perfect snack.

Step 6

To add personality, melt dark chocolate, then dip the tip of it in dark chocolate (about 2 teaspoons).

The add your choice of topping. Here are some ideas:

Unsweetened coconut

Goji berries

Step 10

Matcha

Step 11

Red pepper

Step 12

Sea salt

Step 13

Place in the freezer for 45 minutes, then store in the refrigerator.
