White Bean Soup Recipe – Quarantine Cooking
Ingredients for 4 hearty servings
- 1 tablespoon olive oil
- 1/2 cup diced onion
- 1 tablespoon garlic
- 1 lb 94% lean ground turkey (OR your choice of lean protein)
- 1 1/2 tablespoons The Fit Cook Land Seasoning
- 4 cups chicken (or turkey broth)
- 1 can (14.5oz) diced tomato
- 2 cans (31oz) white beans, drained
- 4 cups raw spinach
- sea salt & pepper to taste
- fresh lemon to taste
Steps
Step 1
Set a pot on medium heat. Once hot, add oil, garlic and onion. Saute until fragrant, about 2 – 3 minutes. Then add ground turkey. Chop up the turkey finely as it cooks in the skillet. Cook for 4 – 6 minutes and be sure you’re chopping it into small pieces. Sprinkle in the herb seasoning as the turkey cooks.
Step 2
Add the remaining ingredients to the soup except for the spinach. Bring the soup to a light simmer, then cover and cook for at least 10 minutes.
Step 3
Add in the raw spinach and continue stirring until it wilts. Cover and cook for an additional 3 – 5 minutes, then season to taste with sea salt, pepper and lemon.
