Vegan Banana Cookies Recipe

Ingredients

Ingredients for 8 cookies

  • 1 1/2 (~174g) ripe bananas, peeled
  • 2 tablespoons olive oil
  • 146g (~1 cup+ 2 tablespoons) super fine almond flour
  • 1 teaspoon baking powder
  • Toppings
    • Your choice of topping
Steps
  1. Set oven to 350F.
  2. In a bowl, mash up the banana, then add the olive oil.  Once mixed, add the almond flour and baking powder.
  3. Line a baking tray with parchment, then use an ice cream scooper or another spoon to evenly divide the batter onto the baking tray.
  4. If desired, you can add your own toppings!  I tried:

  5. Bake for 12 to 15 minutes, or until the edges and the cookies are golden brown.
