4-Ingredient Vegan Banana Almond Cookies
Ingredients for 8 cookies
- 1 1/2 (~174g) ripe bananas, peeled
- 2 tablespoons olive oil
- 146g (~1 cup+ 2 tablespoons) super fine almond flour
- 1 teaspoon baking powder
- Your choice of topping
Set oven to 350F.
In a bowl, mash up the banana, then add the olive oil. Once mixed, add the almond flour and baking powder.
Line a baking tray with parchment, then use an ice cream scooper or another spoon to evenly divide the batter onto the baking tray.
If desired, you can add your own toppings! I tried:
vegan dark chocolate chips sweetened with Stevia
coconut sugar cinnamon
Bake for 12 to 15 minutes, or until the edges and the cookies are golden brown.
