Quick Stuffed Cheesy Jalapeño Turkey Burger

I am kicking off another “cooking on the go” series with my friends at Hilton for their Homewood Suites and Home2 Suites properties to highlight just how easy it is to cook and enjoy calorie conscious meals while away from the comfort of your own kitchen. Today, we’re taking it to the grill!

Ever seen a grill somewhere while vacationing and had the passing thought of – “something grilled would be good right about now – I’ll do that when I’m back home?” Truth is, often times we tend to overthink just how easy and convenient it is to fire it up and cook a meal poolside.

When in doubt, remind yourself to “keep it simple!” For me, that means minimal ingredients and maximum flavor.

WHAT I LOVE ABOUT THIS RECIPE…
This recipe is all about convenience and keeping costs low which are necessities when you’re away from home.

1. we repurpose taco seasoning as a burger seasoning;
2. we use a popular snack, string cheese, instead of buying a block of cheese. This way we can easily consume leftover string cheese as a portion-controlled snack;
3. we can keep the ingredient list low and simple – we need 4 things to make these patties.

Quick Stuffed Cheesy Jalapeño Turkey Burger

Ingredients for 4 burger patties

* Optional Substitution Note

  • 1 lb 93% ground turkey
  • 1 jalapeno, chopped and partial seeds removed for spiciness
  • 1 tablespoon taco seasoning (from a taco seasoning packet)
    • SUBSTITUTION:
      • 2 teaspoons chili powder
      • 1 teaspoon smoked paprika
      • 1 teaspoon cumin
      • 1/2 teaspoon cayenne (or more/less to taste)
      • 1 teaspoon sea salt
      • 1 teaspoon pepper
  • 41g cheese OR 2 sticks of strong cheese (I used cheddar & mozzarella swirl string cheese)
  • Burger Garnish
    • whole wheat bun OR Romaine lettuce leaves
    • lettuce
    • tomato
    • onion
    • mayo OR fresh avocado

STEPS

Step 1

Fire up your grill!

Step 2

In a bowl, mix together turkey, seasoning and chopped jalapeño. Evenly divide the meat into 4 large balls and set aside.

Step 3

Slice each piece of string cheese down the middle, and then in half.  This should create 4 pieces of cheese for every stick of string cheese, so 8 pieces total.

Step 4

Take one of the balls of meat and divide it in half.  Form a patty in your hand, then place 2 of the chopped pieces of string cheese in the center of the patty and cover it up using the remaining meat.  Repeat.

Step 5

Place the patties on the grill and cook for about 10 – 12 minutes, flipping them halfway through.  The meat should be brown and there should be NO visible pink pieces. (Note: you can also cook these on a nonstick skillet using a little spray olive oil.)

Step 6

Build and garnish your burger and enjoy!
