Slow Cooker Italian Greens & Chicken Soup

Slow cooker chicken soup is here! Well, truthfully, it never left but the colder weather is even more of an excuse to fire up the old “crockpot,” toss in some items, walk away, then come back to a delicious, warming recipe.

If you want to switch up your favorite chicken soup recipe, try my Italian-inspired greens and chicken soup. Even though it’s low carb, the abundance of greens make it pretty hearty and satisfying. And it’s even better that you get a punch of vitamins and minerals. To make this dish even more nutrient dense, enjoy with brown rice or wheat farro.

Ingredients you’ll need for this great recipe are Italian chicken sausages, chicken breasts, celery, cabbage, green chard, onions and seasonings. Sounds good? Let’s get started.

Set the slow cooker to medium heat. When hot, add olive oil, then onion and garlic. Cook for a few minutes until the garlic is slightly browned.

Add the chicken sausage and continue cooking. Then, add the chicken breast and 1 tablespoon of Italian seasoning and 2 teaspoons of fennel. Cook for a few more minutes.

Now add chicken broth, water, sea salt and pepper and stir. Set to low heat and cook for six more hours.

After 5 hours of cooking, add the other ingredients, chard and cabbage, and stir. Cook for another hour.

Garnish with fresh parsley, fresh basil and red pepper flakes. Enjoy your slow cooker Italian chicken soup.

Slow Cooker Italian Greens & Chicken Soup

Ingredients for 5 servings

* Optional Substitution Note

  • 1 1/2 tablespoons olive oil
  • 1/2 cup onion, chopped
  • 1 tablespoon garlic, minced
  • 9oz (3) lean Italian chicken sausage, chopped into 1/2-inch pieces
    • Substitute: regular or spicy chicken sausage;  beef sausage or pork sausage
  • 1 lb chicken breast, cut into 1-inch chunks
  • 2 celery stalks, chopped
  •  Seasonings
    • 1 tablespoon Italian seasoning
    • 2 teaspoons fennel (optional)
  • 5 cups low sodium chicken broth
  • 2 cups water
  • sea salt & pepper to taste
  • 4 cups green chard (about 3 leaves), chopped
  • 3 cups (or ~1/2 medium) cabbage, chopped
  • Garnish
    • fresh parsley
    • fresh basil
    • red pepper flakes

STEPS

Step 1

Set slow cooker setting to medium-heat “Sauté” (or set a nonstick skillet on medium heat).  Once hot, add the olive oil, onions and garlic.  Cook for 2 to 3 minutes until the onions have turned slightly brown and translucent.

Step 2

Add the Italian sausage and cook for another 2 – 3 minutes or until the outer edges are seared.

Step 3

Add the chicken breast and the seasonings.  Stir and cook together for 1 – 2 minutes.

Step 4

Turn off the saute function and add broth, water and a pinch of sea salt & pepper.  Stir, then cook on low heat for 6 hours.

Step 5

When one hour remains, add in the chard and cabbage.  Stir, then continue cooking for the remaining time.

Step 6

Season to taste with sea salt & pepper, garnish and enjoy!
