I love stir-fry. If you’re like me, I wouldn’t mind having some variation of stir-fry on a weekly basis. It’s a great way toadd variety to your diet and “experiment” with different vegetable combinations.  This is a great a side dish or main dish, just pair it with brown Basmati rice or quinoa for a more filling, hearty option.  I enjoyed this meal as part of my 5-day Vegan challenge but it’s good ANY time of year.

Sesame Butternut Squash & Green Bean Stir-Fry

Ingredients

Ingredients for about 3 servings:

  • 1 medium butternut squash (peeled, chopped)
  • 3 cups green beans (chopped), raw
  • 1 1/2 tablespoon sesame oil
  • 3 tablespoons low sodium soy sauce
  • 2 tablespoons apple honey (bee free)
  • 1 1/2 tablespoon minced ginger
  • garnish:
    • white sesame seeds
Steps
  1. Chop butternut squash and green beans into pieces.
  2. Set a skillet on medium high heat and add sesame oil.
  3. Once the skillet is hot, toss in butternut squash and green beans and cook for about 7 minutes, or until the veggies begin to sear.
  4. Then, add minced ginger, apple honey and low sodium soy sauce. Stir quickly, ensuring all the vegetables are coated in the sauce and that the sauce does not burn.  If you notice the sauce is burning, reduce the heat.
  5. Garnish with sesame seeds and enjoy with quinoa or basmati brown rice.
