Mac and cheese (or mac n’ cheese) is a dish that mainly consists of macaroni pasta and cheese sauce. Commonly used cheese is cheddar. You can also add other ingredients — such as meat, breadcrumbs, and vegetables — and usually served as a main dish or side dish in restaurants.

There are several ways to cook this dish. The traditional one is a casserole baked in an oven. The other one is by using a saucepan on top of the stove.

When making this dish, it’ll only take you a total time of more or less 30 minutes. First, cook quinoa pasta and set aside. Cook the ground turkey (you can use sliced bacon or any meat substitute if the turkey is not available, like in my case) with garlic paste, add Greek yogurt, goat cheese, chives, and mozzarella. You can also add chili if you want it to be spicy.

Let the sauce thicken then add the cooked quinoa pasta and the rest of Greek yogurt. For its nutritional information, it is rich in protein, dietary fiber, vitamin A, vitamin C, potassium, calcium, and iron. Want to make it vegan? Substitute the meat with broccoli and mushroom!

Turkey Mac and Cheese

Ingredients

* Optional Substitution Note

Ingredients for up to 5 servings:

  • 4 slices turkey bacon (nitrate free, uncured)
  • 4.5oz Ancient Harvest Gluten free Quinoa Macaroni pasta (or use whole wheat macaroni)
  • 1 3/4 cup Greek yogurt (2%)
  • 2 oz goat cheese
  • 1/2 cup reduced fat mozzarella
  • 1 tbsp garlic paste
  • fresh chives
  • salt & pepper to taste

Steps

Step 1

Boil quinoa pasta and set aside.

Step 2

Slice bacon into pieces and then cook in a nonstick skillet with garlic paste on medium high heat.

Step 3

Reduce heat to medium and add 1 cup of Greek yogurt, goat cheese, chives and mozzarella.

Step 4

Cook until the sauce is an even consistency.

Step 5

Let the sauce thicken and then remove from heat.

Step 6

Then add macaroni and the rest of Greek yogurt. Mix.

    This was pretty good but you need to love turkey bacon. I have made this with ground beef and turkey too. Also delicious
