A tasty and fragrant dish, Chipotle Salmon with Grilled Avocado mixes the smokiness of Chipotle with the freshness of salmon and the creamy smoothness of the grilled avocado. Start by preparing the grill by setting the temperature to 350°F/177°C.

Then, add cracked pepper, lime zest, and garlic powder to 1 1/2 pounds of raw wild salmon. Place the salmon on a piece of Reynolds Wrap Non-Stick Foil that has been folded in half. Fold the sides, top, and bottom to enclose the salmon. Grill the salmon for 6 to 8 minutes in total.

Make the chipotle sauce while the fish is cooking. Using tomato sauce, chili powder, cumin, smoked paprika, cayenne, sea salt, raw honey (or agave/maple syrup), and lime zest, you may create a replacement for chipotle sauce if you don’t have any on hand. Combine the ingredients, then taste and adjust the seasoning.

When the salmon is done cooking, take it off the grill by opening the foil package. Set the grill to “smoke” or add wet wood chips for smoking, and lower the heat to a low setting (about 180°F). Brush the fish with the chipotle sauce after drizzling it on. Reposition the salmon on the grill with the lid open.

You could grill ripe avocados alongside the fish for extra delectable results. The avocados should be cut in half, the pits removed, and placed on the grill face down. Baste them with the chipotle sauce every 5 to 6 minutes while smoking them for 10 to 15 minutes. Remove the avocados from the grill after they have grill stains.

When the salmon has reached the appropriate doneness, take it from the grill after the avocados have been cooked. If desired, garnish with lime and cilantro. The salmon should be flaked with a fork and placed within the grilled avocado halves. Add your preferred salsa on top, then season with salt & pepper to suit.

Simple Sweet Chipotle Grilled Salmon In Avocado

Ingredients for 6 servings

* Optional Substitution Note

  • 1 1/2 lb wild salmon, raw
  • 2 teaspoons garlic powder
  • 1 teaspoon lime zest
  • 2 teaspoons cracked pepper
  • Sauce
  • 4 tablespoons chipotle sauce from canned chipotle peppers
  • Substitute for chipotle sauce:
  • 4 tablespoons tomato sauce
  • 1 teaspoons chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne
  • 1 teaspoon sea salt
  • 2 tablespoons raw honey
  • Substitute: agave; maple syrup
  • 1 1/2 teaspoon lime zest
  • 3 medium ripe avocados
  • 6 tablespoons of your favorite homemade or store-bought salsa (I used a pineapple salsa with pineapple, bell peppers, cilantro and lime juice)

STEPS

Step 1

Fire up the grill to about 350F/177C in temperature.

Step 2

Tear off a long sheet ofReynolds Wrap Non-Stick Foil – about twice the length of the salmon – and fold it in half.

Step 3

Place the salmon on top and season with garlic, lime zest and pepper.  Fold in the sides of the foil and then the top and bottom in order to seal it closed.  Place on the grill for 6 to 8 minutes.

Step 4

Mix together the ingredients for the sauce.  Season to taste with lime zest, pepper and sea salt (if needed at all since chipotle pepper sauce tends to be salty).

Step 5

Take the salmon off the grill and open up the foil. Reduce the heat of the grill to low )around 180F) and set it to “smoke,” or add some soaked wood chips to the coals so it begins to smoke.

Step 6

Drizzle the sauce on the salmon, then brush it all over the salmon. Leave it open and place it back on the grill. And if desired, and hopefully it is, slice open ripe avocados, remove the pit, then place the avocados face down on the grill. Smoke for 10 to 15 minutes and baste with a brush every 5 to 6 minutes. Remove the avocado halves after about 5 minutes or after they have grill marks on the flesh.

Step 7

Remove the salmon from the grill once it is cooked to your desired readiness and garnish with a little cilantro (and lime).

Step 8

Flake the salmon with a fork then stuff it inside the grilled avocados.  Top it off with  your favorite salsa.  Add sea salt and pepper to taste.
